Which are the gastronomic specialities that you may encounter on your trip to Basilicata? Many are the delicacies of this region, and travelling here and listening to the local guide, and the people who are familiar with this territory, will acquaint you with a more genuine knowledge of these places. A trip to Matera must absolutely include a visit to a bakery where you can taste the famous bread in the shape of a “croissant” or the “pagnotta” – loaf of bread – together with crisp focacce, taralli and other specialities. In olden times the women in these places kneaded the dough and took it to the closest public oven, usually fired by wood. So as to recognise their loaves they usually marked them with their initials. In the photo you can see my bread with the initials MC. If you wish to have your own brand we can stop in a special artisan workshop and have your initials cut in olive wood. In the province of Potenza there is a small village “Senise” where a special type of red pepper, a very thin skinned type, is cultivated and dried. The traditional method of preparing this pepper is to fry it in abundant extravirgin olive oil. In this way we get the unique “crusco” which is unfortunately untranslatable but the word is certainly onomatopeic!!! Crusty and fragrant, this red pepper is usually crumbled on the special pasta “orecchiette” together with fried bread, on cod and on other traditional peasant dishes. In the photo you can see the way I prepared these dishes as an appetizer – careful not to burn them! Undoubtedly the food experience will make your trip in Basilicata always a more authentic one.
