The traditional Focaccia is very simple, it is made with durum semolina wheat, baked in the oven and seasoned with cherry tomatoes, oregano and excellent oil. There are many versions of stuffed focaccia too, with mortadella and boiled eggs, with onion, pecorino and anchovies and …. ! The Panzerotti, however, are like “tights” filled with a generous dollop of mozzarella and tomato and strictly fried and eat hot, very hot!
